Cheese

Oak Smoked Coverdale

This is a creamy, vegetarian style, crumbly cheese. The cheese has a mild, buttery taste & the texture is firm and open. it is produced at the Fountains Dairy
in Hawes North Yorkshire. Ageing takes four or five weeks after which it is gently cold smoked over whisky barrel chippings for a mild smokey flavour.
Fountains Gold This cheese is produced by the Wensleydale Dairy in North Yorkshire using Channel Island cow’s milk (i.e. the milk from Jersey and Guernsey cow breeds)
which gives it the characteristic buttery gold colour from which it takes its name. A semi-hard cheese with a soft cheddary style texture that just melts
on the tongue.

Wensleydale Ewe’s

Wensleydale made in the original manner using North Yorkshire Sheep’s milk for an authentic recreation of this modern day British classic. Matured for a
minimum of nine months to produce a deep non-acidic flavour. The style is typical of Wensleydale cheese, moist and crumbly, with a finish of honey and cut
grass. A very special cheese from the dairy at Hawes in Wensleydale.

Yellison Goat’s

Made by Sharron and Ed Parker at Sire Bank Farm in Bradley near Keighley, this is a delicate fresh soft cheese not dissimilar to Scottish Crowdie.
It has a wonderfully light almost citrus flavour and a soft spreadable texture.

Devils Rock Blue

An organic, soft blue cheese from the Pextenement Cheese Company, based in Todmorden. It won a gold award at the Artisan cheese awards, and finished
2nd in the organic class. Pexommier A soft runny coulommier style cow’s milk cheese locally produced in the Pennines of West Yorkshire. Cow’s milk Pasteurised Vegeterian.
